Salmon is a desirable finfish for its high quality of protein. Contains a variety of healthy nutrients. An excellent source of omega-3 fatty acids. Wild Alaskan Salmon is an extremely powerful "anti-aging" food for your heart and brain.

Species:

KING (Chinook)

The largest of the 5 Alaskan salmon species. A prime candidate for smoking because of its high oil content. Rich in flavor and desired for many cooking methods such as grilling, sautéing and roasting. Harvested year round.

SOCKEYE (Red Salmon)

Sockeye is sought after for its beautiful red color and rich flavor. A firm fish desired for a variety of culinary dishes from raw to grilled cedar planked. Harvesting from mid-May to mid-September.

COHO (Silver)

Its high fat and retainable color make Coho desired among salmon lovers. Low in saturated fat. Excellent for grilling. Harvesting from mid-June to mid-October.

CHUM (Keta)

Chum salmon has a mild flavor and moderate fat content due to the lower oil content than other salmon. Its firm pink flesh are good choices for roasting and grilling. Harvested from June to September.

PINK

Pinks are an economical choice for a variety of recipes. Its rosy pink-colored flesh, tender texture, and light flavor are great for roasting and grilling. Harvested mid-June to mid-September.

Halibut is low in saturated fat and sodium and is a very good source of protein, niacin, phosphorus and selenium.  Pacific Halibut fisheries are well managed in the Alaskan/British Columbia West Coast Canada waters.  In recent years Halibut quotas have been reduced, causing the demand to be higher and therefore priced higher.  As a main supply in fish and chipper restaurants you can count on Integra Foods #1 quality.  Harvesting from March to November.

Grilling, roasting and deep frying are some of the best ways to cook Halibut.  It is versatile and therefore suitable for all types of cooking methods. Its flesh is pure snow white, has a sweet delicate flavor and has a flaky, firm texture.

Cod is a good source of low fat protein, phosphorus, niacin, and vitamin B12.  Cod fisheries are in excellent shape therefore these fish are both economical and sustainable.  As a main supply in fish and chipper restaurants you can count on Integra Foods #1 quality.  Harvesting from January to mid-May then sporadic openings and closings over the summer and re-opening from September to October.

Lingcod is a member of the Pacific greenling family. This fish protein is economical and a great alternative for Halibut recipes. Its mild flavor, tender (yet firm) large flakes work great for fish and chips. Meat is snow white after it is cooked.


Black Cod

Black Cod has a succulent rich flavor with a velvety texture. It's rich high oil content, pristine snow-white fillet and perfect flake make this desired fish for grilling, poaching, roasting and smoking. It has a very high healthy long-chain omega 3 fatty acids, EPA and DHA. Alaska closely monitors this species therefore Alaska has the largest black cod population. Harvested from March to November.

Alaskan Pollock is high in protein, low in fat and calories, excellent source of minerals such as calcium, iron and Vitamin A. The Alaskan Pollock fisheries is the largest in volume which make this fish very reliable in supply consistency. Available frozen year round.

Alaskan Pollock makes delightful fish sticks, fish cakes and grilled fillets. Used for surimi. Harvesting from mid-January to mid-April and from mid-June to end of October.


Sole/Flounder

Alaskan/Pacific Sole is one of the prized species of the pristine waters of Alaska. Dover, Rex, Rock, Flathead and Yellowfin are all types of sole. Sole is sometimes referred to as a flounder. Benefits are low-fat protein, calcium, potassium and magnesium. Available frozen year round makes this a reliable protein. Harvesting from mid-Jan to mid-December

Preparing sole is very simple in the fact that minimal handling is best. This will insure that the moisture is preserved maintaining the tender texture and mild flavor. Poaching, sautéing and steaming are all good. Serve with your favorite sauce.


Rockfish/Snapper

Snapper is a species of Rockfish. Marketed as Pacific Snapper fillets which is low in saturated fat and very high in selenium, phosphorus, and vitamin B12. This delicate, nutty flavored fish is one of the most popular commercial species in the northeast Pacific. Fished all year round from the pristine waters of Alaska and therefore a very reliable fish protein.

Sautéing, steaming, and frying are all good ways to cook Snapper/Rockfish. Marinate with your favorite sauce or coat in flour and sauté in olive oil served on a bed of lettuce with sliced lemon. Very popular with Asian cuisine.

Squid are an excellent source of selenium, riboflavin, and vitamin B12. The squid family is varied and harvested around the globe. A favourite domestic squid is the California loligo opalescens. Mahi Mahi is low in saturated fat and is a good source of vitamins & protein. A delightful tropical fish protein. It is very lean but has a sweet, moist, flavorful taste. Try in recipes that call for catfish or tilapia.
